Italian Sauce Recipe
Ingredients:
2 glasses of Chablis
2 Tablespoons of mushroom trimmings
1 piece of leek; cut up
A bunch of herbs
5 pcs of peppercorns
2 glasses of Espagnole or Velute sauce
1/2 glass of game gravy
Juice from 1 piece of lemon
Instructions:
Combine Chablis, mushroom, leek, herbs, and peppercorns on a stew pan; let it boil and reduce into half. Combine gravy and the Espagnole sauce on another stew pan; boil mixture for some mins.
Combine the 2 mixtures and blend thoroughly. Pass the mixture through the sieve then add juice.
