Italian Pasta Recipe


Italian Pasta Recipe

Ingredients:

cold fowl/game/sweetbread
2 ozs of butter
2 ozs of lard
1/2 lb of flour
grated Parmesan
some truffles
a small pack of macaroni
1 pc of onion; chopped
some cream

Instructions:

Make paste with butter, lard plus flour, putting these for 2 hours into larder. Line mould (plain) with paste, fill with fowl/game/sweetbread cut to bits, diced truffles, shred Parmesan plus some minced onion.

Putting ingredients alternately, add sufficient cream after every layer so it’s moistened. Fill mould then put some paste on top, pressing edges together to prevent cream from getting out.

Then bake in moderate heat for 1.5 hours, take out then serve along with rich sauce (brown). Garnish top using tongue (red) cut to bits and minced pistachios or shaped truffles.
