Insalata di pomidoro (Tomato Salad) Recipe
Ingredients:
2 pieces of anchovies (in oil); boned and minced
1 gill of mayonnaise sauce
Little horseradish; grated
Very little shallot; chopped
Little cold salmon (or trout)
A small gherkin; chopped
Tomatoes (ripe)
Lettuce (or endive)
1 teaspoon of tarragon; chopped
1 teaspoon of chervil; chopped
Oil
Vinegar
Salt
Pepper
Cucumber slices
Eggs (hard boiled); quartered
Instructions:
Combine anchovies, (mayonnaise) sauce, horseradish, shallot, salmon, and gherkin; mix thoroughly and stuff inside the big tomatoes.
Make the lettuce salad, with tarragon, chervil, vinegar, oil, salt & pepper. Place cucumber slices in one layer then place stuffed tomatoes atop. Decorate with quartered eggs.
Note: Proportion for vinegar and oil is one to three.
