Insalata di patate (Potato salad) Recipe
Ingredients:
New potatoes
3 tsps of salad oil
1 tsp of vinegar (white)
Onion
Chopped parsley
Chopped tarragon
Chopped chervil
Chopped celery
Whipped cream
Salt & Pepper
Watercress
Tarragon vinegar
Slices of truffle (thin, cooked in white wine)
Slices of cooked cucumber
Instructions:
Steam the potatoes till cooked thoroughly. Let cool then slice. Pour over vinegar (white) and oil.
Rub onion on the (salad) bowl. Place sliced potatoes in one layer then sprinkle parsley, chervil, celery, and tarragon. Repeat the layering till potatoes are used up.
Combine cream, (tarragon) vinegar, salt, and pepper; mix thoroughly and cover onto the layered potatoes. Garnish with a watercress, some thin truffle and cucumber slices.
