Gnocchi alla Lombarda Recipe
Ingredients:
2 or 3 potatoes
2 Tbsps of flour
1 pc of beaten egg
Butter
Grated cheese (Parmesan)
Grated cheese (Cheddar)
Instructions:
Boil the potatoes till cooked through then pass through the hair-sieve. Combine with flour, beaten egg, and just enough amount of milk, making the paste firm and smooth; stir thoroughly.
Roll out to a shape (like German sausage); cut to 3/4-inch rounds and place in larder, letting them dry, at about 30 mins.
Drop gnocchi individually onto boiling water with salt; boil them for 10 mins. Take out and slice. Place on a buttered baking dish, in layers with butter in between. Strew lots of grated cheeses and bake for 10 mins.
