Fritto Misto alla Villeroy Recipe
Ingredients:
Cock’s combs (big)
Brain bits (calf)
Sweetbread
Stock
Herbs
Lemon juice
Villeroy
Truffles cuttings
Mushrooms cuttings
Egg (beaten)
Breadcrumbs
Instructions:
Cook the cock’s combs, brain bits, and the sweetbread on the stock. Drain then marinate slightly with herbs and juice from lemon. Prepare the Villeroy then add the cuttings: sweetbread, truffles, brain, mushroom.
Once cold, carefully mask ingredients, dip on egg then roll on breadcrumbs. Fry till golden.
