Fritto Misto alla Piemontese Recipe
Ingredients:
1 Tablespoon of flour
2 pieces of egg yolks
2 Tablespoons of Chablis
Salt
2 pieces of egg whites; beaten till stiff
Sweetbread
Half of brain (calf)
Cooked palate (ox); cut up
A bunch of herbs
Butter
French beans; half boiled and dried
Instructions:
Combine flour, egg yolks, small amount of salt, and Chablis; mix thoroughly to form a (thin) paste, adding small amount of water if very thick.
Blanch the sweetbread, cooked palate, and brain; boil with herbs and cut to walnut-size pieces. Dip onto paste till coated well, dip onto beaten egg whites; fry quickly on butter.
Note: Serve this with beans, floured then fried along with the others. Boil the palates for 6 hours prior to using.
