Fillets of Salmon in Papiliotte Recipe
Ingredients:
1 pc of salmon
a can of oil
some lemon juice
a pinch of salt
a pinch of pepper
some nutmeg
a bunch of herbs
Instructions:
Fillet salmon then marinate for about 2 hours with oil, salt, lemon extract, pepper, herbs and nutmeg. Wipe fillets then put in paper souffle containers along with some oil, herbs and butter.
Cook in grid iron then serve this with piquante sauce made with Espagnole (1/2 pt) plus 1 tablespoon of warm New Century sauce.
