Dindo Arrosto alla Milanese (Roast Turkey) Recipe
Ingredients:
Turkey (whole)
3 pieces of prunes
1/4 pound of sausage meat
3 Tablespoons of chestnut puree
2 pieces of bacon strips (small)
1 piece of pear (half cooked)
Butter
Liver (turkey); chopped
Gizzard (turkey); chopped
1/2 glass of Marsala
Salt
1 piece of rosemary leaf
Bacon fat
1 piece of carrot; cut up
1 piece of turnip; cut up
1 piece of onion; chopped
3 pieces of garlic clove (with a cut)
Instructions:
Combine prunes, sausage, pureed chestnut, bacon strips, and pear; blanch them for 7 or 8 mins then saute on butter. Add liver, gizzard, and Marsala.
Combine salt, rosemary, butter, bacon fat, carrot, turnip, onion, garlic, and cloves; braise turkey for 45 mins.
Stuff the mixture of meat onto the cavity of turkey; roast for 20 mins. Serve at once.
Note: Discard garlic after 10 mins of cooking.
