Croutons alla Romana Recipe
Ingredients:
Bread
Forcemeat (fowl or rabbit)
Tongue; chopped
Chopped herbs (for flavoring)
Cream
Butter
Stock
Flour
Eggs (beaten)
Instructions:
Cut the bread to square or round shapes. Place a tablespoon of forcemeat, little pieces of tongue meat, and herbs on top of each shape; cover it with bread (of same shape). Arrange them onto buttered (fireproof) dish.
Moisten thoroughly with butter, stock, and cream. Cook till all its liquor has been absorbed; turning once to cook each sides. Roll them on flour then dip onto beaten eggs and fry till golden or brown. Serve at once.
