Crotopo Soup Recipe
Ingredients:
1/2 lb of veal (lean)
3 oz of cooked ham (with some fat)
1 pc of egg yolk
1/8 tsp of nutmeg (or less)
Salt & Pepper
French rolls (small); sliced
Soup (clear)
Instructions:
Pound veal on the mortar. Combine pounded veal with ham, egg yolk, nutmeg, salt, and pepper; mix thoroughly. Pass mixture through the sieve and spread onto sliced small rolls.Brown rolls inside the oven and cut into half or quarter. Serve in good (clear) soup.
