Croccante di Mandorle (Cream Nougat) Recipe

Ingredients:

1/2 lb of almonds
1/4 lb of lump sugar
Lemon juice
Sugar (castor)
Pistacchio nuts
Fruit preserves
Whipped cream
Fresh Strawberries

Instructions:

Blanch almonds then shred them. Dry inside a (slow) oven till slightly browned. Place (lump) sugar onto the saucepan then caramelize lightly while constantly stirring.

Once sugar has dissolved, add (hot) almonds and little juice. Turn off heat then mix and pour onto a greased mould then press firmly using the lemon.

Take out from mould then decorate with (castor) sugar, fruit preserves, and nuts. Fill with fruits and cream.
