Costolette di Montone alla Nizzarda (Mutton Cutlets) Recipe
Ingredients:
mutton cutlets (as many as desired)
clarified butter
5-6 pcs of olive
4-5 pcs of mushroom; chopped
1 pc of cucumber; sliced and fried
Instructions:
Trim cutlets then marinate for 2 hours in herbs, spice and vinegar. Wipe well prior to cooking then fry in butter.
When two sides are well-colored and they resist when poked, drain butter then pour Espagnole (4 Tbsps) along with vinegar (1 tsp) plus six pepper corns (bruised).
Arrange on dish, placing one crouton between every cutlet. Stuff olives with minced mushrooms then fry cucumber slices. Use these for garnishing.
