Costolette d’ Agnello alla Costanza (Lamb Cutlets) Recipe
Ingredients:
cutlets of lamb (as many as required)
1 stick of butter
some stock
cocks’ combs
1 pc of liver (fowl); cut into bits
5-6 pcs of mushrooms; chopped
Instructions:
Fry cutlets with butter. Next, drain then replace with fine stock/gravy. Season some combs, liver bits plus chopped mushrooms.
Add in some white sauce and cream (1/2 gill). Mask cutlets using mixture then saute for quarter of an hour.
