Costolette alla Manza (Veal Cutlets) Recipe
Ingredients:
some veal cutlets (turkey or fowl)
fowl forcemeat
some truffles
2-3 pcs of tongue
4-5 pcs of mushroom
a pinch of parsley
1 c of pasta marinate
Instructions:
Cut some lines (horizontal) into cutlets. Put little forcemeat on every one, adding equal amounts of minced truffles, mushrooms, tongue plus a pinch of parsley. Then place one thin sheet of marinate (pasta). Fry cutlets over low fire.
