Coste di Vitello Imboracciate (Ribs of Veal) Recipe

Ingredients:

1-2 veal ribs
1 stick of butter
2 pcs of egg
1 Tbsp of Parmesan; grated
2 c of bread crumbs
a pinch of parsley

Instructions:

From ribs or neck, remove sinews. Cover meat using much butter then half-cook over low fire. Allow to cool. Egg meat over then roll in crumbs with some Parmesan.

Next, fry with butter then serve along with some sauce and sauteed parsley for garnishing. About a spoon of some New Century with 1/4 pint stock (thick) would make a fine sauce.
