Coniglio in salsa Piccante (Rabbit) Recipe
Ingredients:
1 piece of rabbit; cut up
Flour
2 ounces of butter
1/2 piece of celery stick
Parsley; chopped
1 piece of onion; cut up
1/2 piece of carrot; cut up
3 pieces of mushrooms; cut up
3 pieces of cloves
1/8 teaspoon of spice
Salt
1 glass of Burgundy
1 glass of stock
4 pieces of capers
1 piece of anchovy (in brine); pounded
Croutons (fried in butter)
Instructions:
Wipe rabbit pieces then roll on flour; cook on butter for 10 mins. Add celery, onion, parsley, carrot, mushrooms, cloves, spice, salt, stock, and Burgundy. Cover then cook them for 30 mins.
Place rabbit pieces on another stew pan. Get its liquor then pass through the sieve; pour onto the stew pan. Add pounded anchovy and capers; mix them well and simmer mixture for some mins. Serve it hot and garnish croutons.
