Cetriuoli alla Borghese (Cucumber) Recipe
Ingredients:
Cucumber; sliced to 1/2 inch
Butter
Bechamel
Grated cheese (Parmesan)
Cream
Instructions:
Boil the cucumber in salted water then drain through the sieve. Fry slightly with melted butter then braise for 5 mins. Combine grated cheese and cream; spread above the cooked cucumber.
Bake for 10 mins (keeping cucumber rounds separate). Arrange cucumber slices in circle onto a hot serving plate.
