Cervello in Frittata Montano (Calf’s Brains) Recipe
Ingredients:
Brain (calf)
Stock
Half gill of cream
2 pieces of egg yolks
Spice
1 Tablespoon of grated cheese (Parmesan)
2 pieces of egg whites; beaten well
Butter
Instructions:
Boil the brain with the stock, about 10 mins then let cool. Combine cream, egg yolks, spice, grated cheese, and beaten egg whites; mix thoroughly. Cut cooled brain into small balls then mask with the mixture of eggs.
Fry on butter then serve while hot.
