Cavoli Fiori Ripieni Recipe
Ingredients:
Cauliflower; broken to bunches
Butter
1/2 cup of stock (reduced)
Forcemeat (fowl)
Tongue; chopped
Mushrooms; chopped
Truffles; chopped
Parsley; chopped
Egg (beaten)
Breadcrumbs
Espagnole sauce
Instructions:
Blanch the cauliflower pieces then cook on butter & stock. Combine forcemeat, tongue, mushrooms, parsley, truffles, and butter; mix thoroughly and mask on cauliflower pieces. Dip on egg then roll on crumbs.Fry (like croquettes) then serve them with Espagnole.
