Soup alla Canavese Recipe


Soup alla Canavese Recipe

Ingredients:

1/2 pc of onion
2 ozs of butter
1/2 pc of carrot
2 Tbsps of pureed tomato
half a stick of celery
1 small-sized dried sage leaf; crumbled
1/2 pc of cauliflower
a pinch of pepper
a pinch of parsley (chopped)
a pinch of Parmesan; grated
a pinch of cheese; grated
some good white stock
a bit of bacon (fat)

Instructions:

Chop carrot, celery, onions and bacon then fry everything using butter. Cover with some white stock, boiling for some minutes. Then pass them through sieve then add pureed tomato.

Salt some water and blanch cauliflower with it. Let mixture grow cold then drain water. Break cauliflower into small bunches then put into first mixture. Add sage leaf and parsley then boil. Put in pepper and cheese.

Serve, handing some Parmesan along with it.
