Testa di Vitello in Frittata (Calf’s Head) Recipe
Ingredients:
1 pc of Head (calf)
Stock
Beaten eggs
Grated cheese (Parmesan)
Black pepper
Chopped ham
Butter
For the Garnish:
Fried parsley
Fried croutons
1/2 c of Bechamel sauce
1 Tbsp of New Century sauce
Instructions:
Boil head into the stock then cut to slices. Combine beaten eggs, grated cheese, ham., and pepper; mix them well then mask onto the slices of boiled head.
Fry them on butter then garnish. Serve them with the combined sauces.
