Cervello alla Milanese (Calf’s Brains) Recipe
Ingredients:
Brain (calf)
Breadcrumbs
Egg (beaten)
Butter
Salt
Instructions:
Scald the brain then let cool. Wipe with a clean cloth then pat dry (as possible). Cut to walnut-size pieces and dip onto egg then roll on crumbs. Fry on butter then strew over small amount of salt.
