Lingue di Vitello all’Italiana (Calves’ Tongues) Recipe
Ingredients:
2 or 3 pcs of tongue meat (calf)
Salt
Glaze
Stock
Potatoes
Cooked ham (round)
Truffle (round)
Vegetables
Piquante sauce
Butter
Instructions:
Rub salt on the meat; let salted meat stand for 24 hrs. Rinse thoroughly then soak in new water, about 2 hrs. Stew the meat gently until tender then take the meat out, remove the skin then braise in stock and butter for 30 mins.
Let cool then slice into half-inch thick and place them onto a greased saute pan; cover with good (thick) glaze and heat.
Arrange on bordered potatoes.Garnish with truffle and ham on each of slice. Fill center with vegetables, of your choice. Serve along with piquante sauce.
