Testa di Vitello alla Sorrentina (Calf’s Head) Recipe
Ingredients:
Head (calf)
Brains (calf)
Veal
Sweetbread
Mushrooms
Truffles
Nuts (Pistachio)
2 pcs of egg yolks
Herbs & Spice
Bacon slices
Ham slices
Stock
Cream
Instructions:
Boil the head of the calf then let it cool. Get the bone then fill with stuffing: veal, brains, truffles, sweetbread, mushrooms, nuts, egg yolks, some spice, and herbs.
Stitch to close then braise in a (good) stock together with ham, bacon, and herbs. Add cream on the sauce and serve.
