Risotto alla Spagnuola Recipe

Ingredients:

1 pc of small onion; chopped
1 oz of butter
1/2 lb of tomatoes; cut up
Loin of calf; diced
Lean ham bits
4 oz of rice
Stock
Vegetables (peas, cut up asparagus, beans, and cut up cucumber)
Grated cheese (Parmesan and Cheddar)
Gravy

Instructions:

Fry onion on butter in saucepan then add tomatoes; fry them for some mins. Add diced loin and ham bits. Add rice then stock; when it starts boiling, cover the pan and turn the heat to medium.

Once rice has half-cooked, add vegetables and cook them for 15 mins. Serve hot with the grated cheeses and gravy.
