Polpettine alla Salsa Piccante (Beef Olives) Recipe

Ingredients:

some beef steak; sliced
sausage (meat)
1 c of butter
2 pcs of onion
1 c of stock

Instructions:

On every beef slice, put some forcemeat (veal or fowl) and sausage meat. Roll slices up then cook with some onions plus butter. Pour little stock when browned then wait for it to be absorbed.

Serve this with tomato puree or piquante sauce made using Espagnole (1/4 pt) and New Century (1 Tbsp) sauces.
