Salmone alla giardiniera (Salmon) Recipe
Ingredients:
1 pc of salmon
fish forcemeat (white)
mixed vegetables
2 Tbsps of butter
1/4 c of Bechamel sauce
1/4 c of Espagnole sauce
Instructions:
Fillet salmon then place fish forcemeat (layer) over each. Cook veggies separately, using it to garnish every fillet. Put into stewpan, cover and cook. Put one bread crouton in dish.
Mix some peas (cooked) with butter, Bechamel and stock. Use this mixture to garnish crouton. Place fillets around crouton, leaving out center with peas. Pour Espagnole over fillets then serve.
