Crema rappresa (Coffee Cream) Recipe

Ingredients:

5 oz of Mocha coffee (freshly roasted)
1-1/2 c of boiling cream
10 pcs of egg yolks
2 pcs of eggs
8 oz of castor sugar
200 ml of cream
Cream (flavored with vanilla stick)

Instructions:

Bruise coffee then add onto (boiling) cream inside a saucepan and cover; simmer it for 20 mins. Pass it through the muslin.

Combine egg yolks, eggs, cream and sugar; add to the mixture of coffee. Pass mixture through the sieve onto a greased mould.

Place inside a double boiler and steam for one hour or more, without boiling. Place cream onto the ice, about one hour. Turn out onto a plate then pour a little vanilla flavored cream around it.
