Lattughe farcite alla Genovese (Lettuce) Recipe
Ingredients:
Lettuce leaves (outer part)
Forcemeat (fowl or veal)
Ham bits (cooked)
Espagnole sauce
Instructions:
Blanch the lettuce leaves; drain. Place 1 tablespoon forcemeat and ham bits onto each lettuce leaf. Roll leaves up and cover with a buttered or greased paper. Cook for 5 mins inside the oven.
Drain then arrange onto a plate. Pour over some Espagnole.
