Minuta alla Visconti (Chickens’ Livers) Recipe
Ingredients:
2 pieces of livers (fowl)
Cream
1 Tablespoon of grated cheese
A dust of cayenne pepper
For the Custard:
1/2 ounce of butter
1 piece of beaten egg
1 Tablespoon of cheese
Instructions:
Braise livers on butter and pound. Mix small amount of cream, cayenne, and cheese. Spread quickly onto toasts. Keep hot while preparing the custard.
Combine butter, beaten egg, and cheese on a pan above moderate heat. Stir thoroughly until thickened. Spread onto hot toasts. Serve at once.
