Cremona Cake Recipe
Ingredients:
3 pcs of eggs
Castor sugar
Butter
Ground rice and maize
Grated zest from 1 pc of orange
1/8 tsp of salt
Whipped cream (flavored with Maraschino)
Almonds; splitted and roasted
Preserved cherries
Icing (flavored with orange)
Instructions:
Weigh the eggs then make (equal) quantities with sugar, fresh butter, and ground maize and rice. Combine mixture with 3 egg yolks and 1 egg white; make into a paste. Add salt and zest.
Roll out into five-shilling thick, color with egg yolk then place inside a (cake) pan. Bake till it has good color; take out. Cut to 4 equal round pieces.
Spread the cream thickly onto a pastry round and cover with another round, do the layering till last pastry round covers its top.
Cover with orange-flavored icing then decorate with cherries and almonds on top.
