Coniglio arrostito alla Corradino (Roast Rabbit) Recipe
Ingredients:
Rabbit
Calf’s fry (cooked in butter); chopped
Salt & Pepper
1 piece of fennel; chopped
1 piece of onion; chopped
1 piece of bay leaf
Gravy
1 piece of garlic clove (with one cut)
Ham sauce
Instructions:
Combine (calf’s) fry, onion, fennel, (bay) leaf, salt, and pepper; stuff onto the rabbit. Braise for 30 mins and roast, while basting with gravy occasionally. If preferred, add garlic while braising, but discard after 5 mins.
Serve hot with (ham) sauce.
