Authentic Italian Recipe
Ingredients:
3-4 pcs of turnips (young)
1 stick of butter (for frying)
3 ozs of rice; well-washed
some gravy
some tomatoes; mashed
Instructions:
Slice turnips and place on dish. Sprinkle some salt, cover then let it stand until water runs out for around 2 hours. Drain slices then fry with butter.
Pour in mashed tomatoes plus some gravy. Cook for some minutes then mix with the stock that’s boiling. Next, add rice. Boil mixture for 30 minutes.
When minestra boils for too long, flavor is lost. But n Lombardy, they seldom boil macaroni, rice, &c. enough.
