Bragiuole di Vitello (Veal Cutlets) Recipe
Ingredients:
1 pc of veal steak
a pinch of salt
a pinch of pepper
3 ozs of butter
some bacon bits
1 pc of carrot; cut up
1 Tbsp of flour
1/2 glass of Chablis
1/2 glass of water
1 pc of lemon
Instructions:
Chop veal into cutlets, add pepper and salt then put into low pan. Add butter (2 ozs), carrots and bacon bits. Cook until browned then add flour, Chablis plus water.
Cook for 30 minutes over low fire. Remove cutlets and reduce sauce then pass through sieve. Next, put over fire then add butter (an ounce) then squeezed lemon. Pour over cutlets when it’s hot.
