Bodini Marinati Recipe
Ingredients:
Truffles; chopped up
Tongue meat (ox); chopped up
Sweetbread; chopped up
Mushrooms; chopped up
Herbs; chopped up
Forcemeat (veal)
Flour
Pasta marinate
Instructions:
Combine truffles, sweetbread, tongue, herbs, and mushrooms; mix thoroughly then add onto the forcemeat (see note). Mix them well then form into small pigeon-sized balls, flour then mask thoroughly with the pasta marinate.
Heat butter above gentle heat and fry balls till cooked thoroughly. Place above paper towels to absorb excess oil.
Note: The measurement of the ingredients must consist of 2/3 forcemeat then 1/3 of others.
