Baccala in Istufato (Haddock) Recipe

Ingredients:

1 pc of haddock (or lemon sole)
1/2 pc of carrot
3-4 Tbsps of anchovies; pounded
1 pc of onion
1 pc of lemon
1 stick of butter
2-3 c of flour
1 c of stock (fowl or veal)
1 glass of white wine

Instructions:

Spread flour over fish, put into butter, frying both of the sides well. Pour Marsala onto fish. After fish has absorbed it, pour stock, simmering for 30 minutes. Next, skim it, reducing sauce.

Before serving, pour over fish.
