Astachi all’Italiana (Lobster) Recipe
Ingredients:
2 lobsters; boiled
1/2 c of Velute (sauce)
1/2 glass of marsala
1 stick of butter
some fish forcemeat
1/2 c of olives
1 c of anchovy butter
1/2 c of button mushrooms
some truffles
1pc of lemon
1 Tbsp crayfish (butter)
1 c of Italian sauce
Instructions:
Take 1 lobster and cut its flesh into strips or fillets. Put into saucepan along with Marsala plus Velute then boil it for some minutes. Next, put pan-fried bread (about one crouton) on dish, preferably oval. Cover with forcemeat (fish) then place lobster over it.
Cover using buttered paper then moderately heat in oven as long as it takes for the fish to be cooked. Make quenelles out of olives, mushrooms and butter (anchovy).
Mix this with some sauce (Italian), using it as garnishing. Also garnish with sliced truffles. Then add crayfish and lemon extract to sauce. Serve.
