Anitra Selvatica (Wild Duck) Recipe
Ingredients:
Wild duck; quartered
2 pieces of liver (fowl); cut up
Butter
1 glass of Marsala
1 cup of stock
1 cup of Espagnole sauce
6 pieces of young turnips
Young carrots
A bunch of parsley
Herbs
5 pieces of little mushrooms; cut up
1/8 tsp of sugar
Instructions:

Shape then blanch carrots and turnips; place onto the stew pan. Add duck pieces and liver. Pass its liquor or sauce through the sieve. Pour onto the duck then add herbs, mushrooms, and parsley. Cook above gentle heat for 30 mins.
Skim its sauce then pass through the sieve then add sugar. Arrange the cooked duck pieces on plate, add vegetables. Pour over the sauce.
