Animelle Lardellate (Sweetbread) Recipe

Ingredients:

2 pcs of sweetbreads
Lard
Stock
Vegetable macedonia

Instructions:

Blanch and lard sweetbreads; cook gently with (good) stock then skim. Reduce into a smooth glaze, covering the sweetbreads. Cut sweetbreads to 3 or 4 pieces then arrange on a round dish; glaze over them.

Put a cup-shaped bread on the middle then fill with vegetable macedonia.
