Animelle al Sapor di Targone (Lamb’s Fry) Recipe
Ingredients:
Lamb’s fry
Ham
Bacon
Chopped herbs
A pinch of pounded spice
Stock
Flour
3 ounces of butter
Bay leaf
Garlic clove (with 2 cuts)
Tarragon sauce
Instructions:
The (lamb’s) fry must be almost a sweetbread with very less liver then lard (each) piece w/ ham and bacon. Roll on herbs with spice and dip on flour; braise on stock.
Add butter, bacon bits, ham bits, (bay) leaf, garlic clove, and herbs; cook till fry has glazed well. Serve hot with the Tarragon (sauce).
Note: Discard garlic after 9 mins of cooking.
