Amaretti leggieri (Almond Cakes) Recipe

Ingredients:

Sweet almonds
Bitter almonds
Castor sugar
Egg white (beaten till stiff)

Instructions:

Blanch almond (with equal quantities) then dry inside an oven and pound on the mortar. Add (double their quantity) sugar. Combine with a beaten egg white.

Shape them into small balls, pigeon egg size. Bake inside a (very slow) oven.
