A Condiment for Seasoning Minestre, &c Recipe

Ingredients:

1 pc of onion
1 pc of carrot
1 celery stick
2 pcs of mushroom
1 pc of tomato
a pinch of salt
some butter (for frying)
some good stock

Instructions:

Chop celery, onion and carrot then fry in some butter with salt. Then add some cut-up veal and little slices of ham (cooked), mushrooms plus tomato pulp. Cook this for about 15 minutes, keeping mixture moist by occasionally adding some stock.

Pass mixture though sieve. Use this to season minestre, rice, macaroni &c. Mixture must be poured only when food is almost cooked.
